Chocolate Sandwich Cookies

I love this recipe because it's so easy--only 5 ingredients for the whole cookie (and they look so gourmet!)

2 boxes of Devil's Food Cake mix (dry)
3/4 C. oil
4 eggs


Mix well and shape into 3/4" balls

Bake at 350* for 7-9 minutes.

Filling:  8 oz. soft cream cheese
3 C. powdered sugar (sometimes I add a bit more)

Mix well.
Give beaters to very helpful 6-year-old daughter (optional--I was licking the other one) :)


Spread filling between cooled cookies.
I keep them refrigerated because I'm not sure if you can let cream cheese just sit out.  (Have I mentioned I have a major fear of food poisoning and throwing up?  Well, I do.  Big time.

They were delish and it is a good thing you took the rest home cause about 10:00 last night I would have made myself sick on them too! And I have frozen them before and they are good that way too not fully thawed.

Oh my goodness, this is seriously my fave recipe... but I don't make them much anymore, because I EAT THEM ALL! And now I wonder why I need to lose a few pounds. YUM!!

I think they are good out on the counter, well at least over night. I base this off of a story from my mission where I saw a Pizza Hut(Which ironically I'm not even that fond of) in the middle of south america and wanted to taste real pizza so badly that I ordered one and then realized that we didn't have a fridge and there was no way I could eat it all. So what did i Do? Put it in the cupboard and ate the rest the next morning for breakfast. I figured the goodness was worth the risk. Not even a stomach ache. I live of off the 24 hour rule now, though only in extreme situations... like a mission
